The first thing you should is to decide which type of espalier tree you want. There are dozens of fruit trees you can pick from, which mostly are apple, peach and pear, nevertheless, citrus trees are more common today because of their interesting leaf structure. Afterwards, you need to choose a location. Because espaliered fruit trees need more sunlight, find the spot in your backyard or garden where there are the sun at least six hours per day. People usually plant them on their fences or on the walls because those are the perfect location for sunlight.
